Floating Islands Recipe

Floating Islands


Ingredients :
  • Egg whites 3
  • Skimmed milk 2 cups
  • Custard powder 2 teaspoons
  • Sugar 12-14 measures, or to taste
Method :
  • Beat the egg whites till stiff
  • Boil 1 cup of milk in a pan. Drop rounded spoons of egg white into the hot milk one at a time
  • Poach egg white balls for a minute each. Remove with a slotted spoon and set aside
  • Heat the remaining milk in a pan. Add the custard powder dissolved in a little milk
  • Stir continuously till the milk thickens. Take the pan off the heat and stir in the Sugar
  • Pour the custard into a shallow bowl and carefully place the poached egg whites in the custard
  • Serve chilled
