Floating Islands Recipe
Ingredients :
Egg whites 3
Skimmed milk 2 cups
Custard powder 2 teaspoons
Sugar 12-14 measures, or to taste
Method :
Beat the egg whites till stiff
Boil 1 cup of milk in a pan. Drop rounded spoons of egg white into the hot milk one at a time
Poach egg white balls for a minute each. Remove with a slotted spoon and set aside
Heat the remaining milk in a pan. Add the custard powder dissolved in a little milk
Stir continuously till the milk thickens. Take the pan off the heat and stir in the Sugar
Pour the custard into a shallow bowl and carefully place the poached egg whites in the custard
Serve chilled
