Fish Mornay Recipe

Fish Mornay


Ingredients :
  • Pomfret or sole 500gm
  • Lime juice 1tsp
  • Milk 1tbsp
  • Grated cheese 30gm
  • Parsley 1sprig
  • Salt to taste
  • Pepper to taste
  • Shallots 1tsp
  • Mornay sauce 300ml
  • Mornay sauce

  • Butter 30gm
  • Refined flour 30gm
  • Milk and stock 300ml
  • Cheese 30gm
  • Seasoning
Method :
  • Clean fish. Fillet and skin.
  • Arrange in a baking dish.
  • Season and sprinkle with lemon juice and milk. Sprinkle with chopped shallots.
  • Cook in moderately hot oven.
  • Prepare a mornay sauce using with and fish stock, herbs and seasoning. Cook for 10minutes.
  • Remove shallots and put fish int oa pyrex pie dish.
  • Cost with sauce and sprinkle with cheese.
  • Brown under a grill. Garnish with parsley.
