Cold cucumber soup Recipe
Ingredients :
Cucumber with skin (kheera) 1 kg
Strained vegetable stock 10 cups
Cream (beaten) 100 gms
Salt to taste
chopped onions 1 cup
White chilli powder 1 tbsp
Butter 25 gms
Method :
Slice cucumbers into four parts each
Heat butter in a pan. Fry chopped onions to transparency. Add cucumber pieces and fry for a while
Add veg. stock, salt and white chilli powder. Stir
Cook at low heat for 20 minutes under cover to pulp
Remove from stove. Cool
Put the mix in mixie and make puree. Strain through muslin cloth
Put the soup in bowls and place in fridge for an hour
Garnish with cream and serve cold
